Ok; today is the day this weight loss challenge gets difficult. It’s end of week two, and Friday is usually a day for us to mostly eat what we want and eat beer. Well, a big pizza and a few beers is not going to help my weight loss; and I would like to have a great number on the scale come Sunday morning. So I did eat just a little more today than my goal, but I still was pretty good.
I wanted to make a whole grain flat bread pizza. I have never made flat bread before. The recipe I found was pretty easy:
2 cups whole wheat flour
1 tsp salt (I used half)
1 T Olive Oil
1 cup hot water
I added 2 tsp of garlic and 2 tsp of Italian Seasoning to the dough.
The dough has to rest for 30 minutes before rolling. This was enough to make two flat breads. Bake the bread thoroughly before topping. It bakes at 350F. We each had half a flat bread for dinner at 210 calories for the bread.
We topped it with pizza sauce, low fat cheese and tons of veggies. The dough ended up a little tough; the edges where it was crispy was the best. It’s something I need to keep working on.
My husband made me this yummy chicken breast sandwich for lunch.
I had an English Muffin with egg and cheese for breakfast before riding in to the studio to lead Zumba Fitness class. On the way home, I had an apple, then a peach at home. Before some P90X Kempo, I had a half PB and J on Dave’s Killer Sprouted Wheat!
Calories eaten: 1,624 (ouch)
Calories burned: 1,275 (I said I would make up for earlier in the week.)
